Flavours

HEAVENLY HONEYCOMB FUDGE
The name says it all! Tomás started making this last year and it has become second favourite of all our fudges ( the favourite is always Tiger Butter). There is something about the melting honeycomb that appeals to all age groups and all taste buds. We don’t make the honeycomb ourselves and sometimes the ingredient label has “wheat” on it so may not be suitable for coeliacs.
STRAWBERRIES AND CREAM FUDGE
Strawberries and cream sums up the taste of summer. This is the sweetest of our fudges: the flavour captures the special taste of strawberries ( mashed up with a fork ) before applying a liberal helping of cream and sugar. Enjoy the taste of summer this month and throughout the year.
PEPPERMINT CHOCOLATE CHIP FUDGE
Peppermint and chocolate chip fudge has a refreshing minty chocolate taste; cool in every sense of the word. Sliced thinly this can also be served as a visually enticing petit-four for the perfect finish to any supper party. The green twirls of Peppermint and Choc Chip Fudge tempt the eye while its mint pleases the palate.
BUTTERSCOTCH, CHOC AND VANILLA (IN LAYERS) FUDGE
When you cannot decide which of the twenty flavours to choose this is a great choice as it contains the three base notes that Tomás works with to create all the other fudges. Butterscotch, choc and vanilla: these three flavours layered on top of each other make an unusual sandwich for any lunchbox. As the flavour rolls around the mouth you wonder is it chocolate you are tasting or is it fudge?
CHOCOLATE ORANGE FUDGE
Chocolate orange fudge. People tell me it tastes just like Terry’s chocolate orange and the swirls that Tomás creates gives a wonderful visual appeal but no it does not count as your Vit C intake today.
CAPPUCINO FUDGE
Cappucino fudge looks just like the real thing – first the layer of coffee fudge topped by a layer of vanilla fudge then sprinkled with chocolate powder. Ideal to nibble with your friends as you have that well-deserved cuppa.
CHOCOLICIOUS FUDGE
Chocolate and Marshmallows – need I say more? The perfect companion to a warm fire and X factor. Regret the marshmallows make this unsuitable for coeliacs..
GRANNY’S NUTTY FUDGE
Granny’s nutty fudge. How did we come up with this name? Well, grannies are full of surprises and so is this. As you bite into this walnut fudge you notice it is flavoured with maple syrup. Taste it yourself before you give some to granny to see what she thinks.
CARAMEL AND VANILLA TWIST
This combination is rather clever: you have the original traditional caramel flavoured fudge mixed with the creamy vanilla AND it looks more interesting than plain fudge because the two flavours have been swirled together.
CHRISTMAS PUDDING (Seasonal)
Christmas pudding fudge: we help to celebrate Christmas by making a fudge stuffed with a mixture of sultanas, raisins, mixed nuts and cherries or whatever is to hand plus a little bit of brandy. The mixed spices bring out the flavour of Christmas pudding: immediately edible and perfectly portable.

This flavour is only made and only available in November and December.
TIGER BUTTER - AWARD WINNER
Tiger Butter fudge. This is the first flavour of fudge Tomás made. It is made with brown sugar. Why did he name it Tiger Butter? Well all the names like ‘traditional’, ‘caramel’, ‘toffee’, ‘original’ just did not do justice to this formidably amazing flavour: courtesy of the green grass of Ireland eaten by the cows transformed into milk and then produced as butter by Kerrygold.
BAILEYS FUDGE
The Irish cream liquer Baileys blends perfectly with fudge. The creaminess of the taste really makes this fudge seem like solidified Baileys!
IRISH COFFEE -- AWARD WINNER
This fudge has more of a kick to it than Baileys as whiskey is used with the coffee. Sometimes it is made with the Hot Irishman Whisky liquer and not as much coffee. Tomás always adds a layer on vanilla on top though so it does look just like an Irish coffee as well as tasting like one.
ZESTY LEMON
The Fudge with a zing! Refreshing tasts of lemon combined with the sweetness of vanilla fudge
CHOCOLATE AND BANANA SWIRL FUDGE
This is a pretty fudge to look at and tastes pretty amazing too. Tomás mixes the rich chocolately choclate fudge with the sweet banana flavour of bananas and cream.
MALTEZER SMUDGE FUDGE
Tomás stirs maltesers into the vanilla fudge until the chocolate melts then he adds another ‘secret ingredient’ that just gives this fudge a very special malty flavour. This fudge is not suitable for a coeliac.
CHOCOLATE FUDGE
Chocolate fudge, you just must taste this chocolate fudge: neither too dark nor too milky Tomás has found a middle ground which is chocolate, chocolate, chocolate for all lovers of chocolate fudge whatever age and stage in life. The chocolate fudge, contains 61% chocolate, sweeter rather than bitter in flavour.
NUTTY CHOC FUDGE
And then he added nuts, hazelnuts. Tomas used to use walnuts but finds the milky sweetness of hazelnuts suits the chocolate fudge better.
VANILLA FUDGE
The vanilla fudge is one of the major base notes for many of the fudges. Made with white sugar rather than brown it does not have the fullness of flavour of the Tiger Butter but is indespensable as a background-soother blending and enhancing the stronger flavours.
VANILLA RUM RAISIN FUDGE
The vanilla fudge partners rum very well and the raisins give an added bite.
VANILLA CHOCOLATE SWIRL FUDGE
The chocolate fudge, contains 61% chocolate, sweeter rather than bitter in flavour is still very chocolatey - when mixing it with vanilla fudge Tomás has made it less rich: you can eat more at once!
SULATANAS AND WHISKEY FUDGE
This is the Tiger Butter fudge with sultanas and whiskey added – best not to drive after eating!
CARAMEL BEURRE SALE FUDGE
Tomás was influenced by a macaroon he ate in France and thought he would try this out – it is very interesting; different. When he brought it to an event in France it sold out very quickly.
COCONUT ICED FUDGE
Coconut is creamy so it makes a worthy addition to the vanilla fudge but without the pink strip it just did not taste as good as it could, now it is yummy…
